Coconut free cooking spray
2 1/2 tablespoons water (2 Tblsp + 1 tsp. + 1/2 tsp.)
1 tablespoon ground flax seed/meal
2 cups flour blend #1
1/3 cup sugar
1/2 tsp. baking soda
1/4 tsp. corn-free salt
1/2 to 1/3 cup of applesauce
1/4 cup canola oil
1/4 tsp salt
(optional) 1 cup of blueberries/cranberries/chocolate/carob chips
Mix flax and water into a small bowl.
Preheat oven to 400 degrees F (convection 375).
Grease muffin pans with coconut free cooking spray.
Mix all dry ingredients into a bowl.
Mix remaining wet ingredients into another bowl.
Fold optional ingredients into dry mixture.
Combine flax, dry/optional and wet mixtures.
Bake for 20 minutes.
