In early 2018, my daughter Renee was in so much pain, she went
to the emergency room. The doctor there thought that it was her
appendix. But after some testing, she discovered gluten was
causing the pain.
She convinced me to remove gluten from my diet and symptoms
(abdominal pain and bloating) that I had been having for years
diminished. Later Renee, Mary and I visited different
allergists. We found that we were allergic to an alarming
number of foods. The top ones (from a prepared food point of
view) were gluten, eggs, corn, potatoes and coconut. Gluten
free bread flour typically uses potato starch. Spray oils can
contain coconut oil. Baking powder contains corn starch.
What's worse, is that MANY packages of salt contain corn - in
the form of dextrose, a corn derivative!
I created this page to share some of the recipes that we've
discovered...sometimes by that ancient method - accidents!
And before I present the recipes, a little side note. The word
potato is singular. Its plural is potatoes. This is true for
tomato - tomatoes. Just something that I discovered along the
way. Go figure...
The recipes (there's only two at the moment) will be organized
in the future, but for now...let's just get it done.
